There are a number of ways to do this and it all kind of depends on what kind of flying you intend to have happen. If you just want them to shoot up out of a shot, that's one thing. If you want them to be swooping around playing chicken with a plane 20,000 feet in the air, that's another thing entirely.

Basically, you need to either key the person out of a shot on greenscreen or rotoscope them out of a shot without greenscreen and then animate them.
